Determination of fat content of nutritious foods by fat analyzer

The fat content of nutritious foods is an important quality indicator of such foods, especially the nutritional content of starch, walnuts, sesame seeds, soybeans, and dairy products as the main raw materials. The current methods for the determination of fat content in food hygiene standards in China are Soxhlet extraction and acid hydrolysis. Among them, Soxhlet extraction is a classic method for measuring fat, and it can measure free fat in foods. Acid hydrolysis is to hydrolyze the sample under acidic conditions to release the bound fat, together with the free fat and small amount of the original food. The fat-soluble ingredients are all extracted with ether and the total fat in the food can be determined. The Gothic-Rothschild method is the standard method for determining fat in milk and dairy products. The sample is hydrolyzed under alkaline conditions and the total fat in the sample is determined. The fat analyzer can also be used to determine the fat content of foods.

After optimizing the experimental conditions, the acid hydrolysis method was compared with the Gothic-Luozi method. Both methods can completely extract the fat in this sample, and the precision meets the requirements. Gothic-Luozi method is more time-saving and convenient. When the sample contains impurities such as pigments, it is measured by the Gothic-Luomethod method. Pigments and other impurities remain in the lower layer of the solution and do not interfere with the measurement. When the acid hydrolysis method is used to measure impurities in the sample, it is also extracted into the organic solvent. The measured fat is crude fat, so the measurement result may be higher than the Gothic-Luozi method. The results of the fat analyzer are even more advantageous and accurate.

In summary, comparing three methods for determining fat in nutritious foods, such as fat analyzers, it was concluded that the improved acid hydrolysis method and Gothic-Luozi method can satisfy the measurement requirements, and Gothic-Luozi method is even more satisfactory. Accurate and convenient, it can adapt to the determination of fat in nutritious foods.
